Chicken breast is leaner and easier to find.

Ground oats provide fiber and are often less expensive.
Soak beef brain in cold water for 30 minutes to remove impurities.
Drain and rinse the brain under cold water.
Remove any membranes and veins from the brain carefully.
In a bowl, mix flour, cornstarch, cumin, coriander, salt, and black pepper.
In another bowl, beat eggs with lemon juice and minced garlic.
Coat the brain pieces in the flour mixture, then dip in the egg mixture, and finally coat with bread crumbs.
Heat oil in a deep skillet over medium-high heat until shimmering.
Fry the coated brain pieces in batches until golden brown, about 3-4 minutes per side.
Remove and drain on paper towels to absorb excess oil.
Serve hot, garnished with chopped parsley.
