Mipanzi ribs, originating from the Democratic Republic of the Congo, are a beloved dish that showcases the region's rich culinary heritage. Squeeze half a lemon over freshly washed pork ribs.
Add 1 teaspoon of garlic and 1 teaspoon of ginger puree to the ribs.
Mix in 1 tablespoon of all-purpose seasoning and 1 teaspoon of black pepper.
Add 1 teaspoon of sweet pepper puree and mix everything with hands to ensure even distribution.
Place the seasoned ribs into an oven tray.
Preheat the oven and set it to gas mark 8.
Cook the ribs in the oven for 1 hour, turning them after 45 minutes for even cooking.
Prepare the plantains by peeling them and slicing them into desired shapes.
Heat vegetable oil in a skillet over medium heat for frying the plantains.
Lower the heat to low once the oil is hot and fry the plantain slices until golden brown.
Add red and brown onions to the ribs for flavor during the last stages of cooking.
