Preheat the oven to 375°F.
In a food processor, finely chop carrots and celery.
Heat a skillet and add 1 tablespoon of butter, then add the chopped vegetables and sauté until translucent.
Add 1 teaspoon of minced garlic and cook for a few more minutes.
In a large bowl, combine 1.5 pounds of ground beef, sautéed vegetables, 1 egg, 1/3 to 1/2 cup of breadcrumbs, 1 tablespoon of Worcestershire sauce, 1 teaspoon of Italian seasoning, 1 teaspoon of salt, and 1/3 teaspoon of black pepper.
Mix the ingredients by hand, being careful not to overmix.
Shape the mixture into a loaf and place it on a foil-lined quarter sheet pan.
Bake in the preheated oven for about 40 minutes or until the internal temperature reaches 160°F.
Let the meatloaf rest for a few minutes before slicing.
