Follow the Irish Stew Recipe, frying Bacon, Onions, Carrots, Thyme, Garlic, and Stewing Lamb.
Add a Vegetable Stock Cube and Guinness to the stew and cook to reduce the sauce.
Prepare a simple pastry mix by adding water and mixing until the dough sticks together.
Flour a work surface and knead the dough for 5-10 minutes.
Tear off one-third of the dough for the top of the pie and roll out the remaining two-thirds to just under half a centimeter thick.
Place the rolled pastry into the pie dish, pushing it onto the edges.
Trim off excess pastry to ensure enough filling can fit.
Fill the pie with the thickened stew mixture.
Roll out the reserved one-third of pastry and cut it slightly larger than the pie dish.
Place the pastry over the filling and seal the edges with a fork.
Brush the top with just the yolk of an egg.
Bake in the oven at 180 degrees Celsius for 30-45 minutes until golden brown.
