2 lbs asparagus, remove the fibrous ends
1 Tbsp olive oil
salt to taste
black pepper to taste
½ cup unsalted butter at room temperature
2 tablespoons fresh lemon juice (from 1 lemon)
2 tablespoons fresh, finely chopped parsley
2 garlic cloves, pressed or minced
1 tsp salt
¼ tsp black pepper

Cut 1 kg of salmon fillet into four 4 oz portions.

Remove the fibrous ends from 2 lbs of asparagus.

Put the salmon slices in a tray and add the asparagus.

Drizzle 1 Tbsp of olive oil over the salmon and asparagus.

Season with salt and black pepper to taste.

In a bowl, mix together ½ cup of unsalted butter at room temperature, 2 tablespoons of fresh lemon juice, 2 tablespoons of finely chopped parsley, 2 minced garlic cloves, 1 tsp salt, and ¼ tsp black pepper.

Spread 3/4 of the butter mixture evenly over the salmon fillets and dab the rest on the asparagus.

Cover the salmon with a slice of fresh lemon.

Put the tray in the preheated oven at 230°C (450°F) for 10-12 minutes.

Remove from the oven and garnish with 2 tablespoons of finely chopped parsley before serving.
