4 cups water
1/2 can coconut milk
1 1/2 tablespoons ginger
2 tablespoons salt
1 scotch bonnet pepper
scallion (amount varies)
1/2 medium onion, chopped
black pepper (to taste)
granulated garlic (1 tablespoon)
4 cups rice
butter (amount varies)
1 cup water (additional)
onion powder (to taste)

Soak 3 cups of red kidney beans overnight.

In a pot, bring 4 cups of water to a boil for about 5 minutes.

Add the soaked kidney beans to the boiling water and cover the pot.

Boil the beans for about 45 minutes until tender.

After 25 minutes, check the beans; if still hard, continue cooking.

Add 2 tablespoons of salt, 1 tablespoon of granulated garlic, and 1/2 can of coconut milk to the pot.

Cover and cook for another 20 minutes.

After 20 minutes, check the beans again; they should be almost cooked.

Add scallion, chopped onion, thyme, and 1 cup of water to the pot.

Add 4 cups of rice to the mixture and stir.
