Preheat the oven to 350°F (175°C).
In a mixing bowl, combine all-purpose flour, sugar, and salt.
Cut in cold butter until the mixture resembles coarse crumbs.
Mix in egg yolk and vanilla extract until combined.
Add cold water, one tablespoon at a time, until the dough comes together.
Form the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
Roll out the chilled dough on a lightly floured surface to about 1/8 inch thick.
Cut into circles and fit them into tartlet pans, pressing gently to shape.
Prick the bottom of each shell with a fork to prevent bubbling.
Chill the shells in the refrigerator for another 15 minutes.
Bake in the preheated oven for 15-20 minutes, or until golden brown.
Remove from the oven and let cool before filling with desired fillings.
