3 Tbsp dry white wine
3 Tbsps apple juice
1 Tbsp whole-grain Dijon mustard
1 Tbsp Dijon mustard
3 tablespoons heavy cream
1 tsp fresh thyme leaves

Season the neck chops on both sides with salt and pepper.

Heat the oil in a frying pan over medium-high heat. Add the chops and fry for 5 minutes on both sides. Transfer to a serving dish.

Reduce the heat to medium, then add shallot and cook, stirring occasionally, until soft, about 5 minutes.

Pour in the wine and apple juice and bring to a boil. Then stir in the whole-grain mustard. Return the chops and simmer for 3-4 minutes. Remove the chops from the pan.
