Preheat oven to 375°F (190°C).
Heat olive oil in a Dutch oven over medium heat until shimmering.
Add chopped onion and minced garlic; sauté until softened, about 3-4 minutes.
Add ground beef; cook until browned, breaking it apart, about 5-7 minutes.
Stir in crushed tomatoes, tomato sauce, salt, black pepper, and red pepper flakes; simmer for 10 minutes.
Layer uncooked lasagna noodles over the meat sauce, breaking them as needed to fit.
Spread ricotta cheese over the noodles, then sprinkle with mozzarella and Parmesan cheese.
Repeat layering until all ingredients are used, finishing with mozzarella on top.
Cover with a lid and bake for 30 minutes.
Remove lid and bake for an additional 15 minutes, until cheese is bubbly and golden.
Let rest for 10 minutes before serving.
