Preheat the oven to 350°F (175°C).

In a small skillet, heat 1 tablespoon of olive oil over medium heat and add 1 large finely chopped yellow onion. Cook for about 10 minutes until softened, not caramelized.

In a bowl, combine 1 cup of panko breadcrumbs with 1/2 cup of milk and set aside to rehydrate.

Once the onions are cooked, turn off the heat and add minced garlic, letting the residual heat soften it without cooking it fully.

In a large bowl, combine the rehydrated breadcrumbs, cooked onions and garlic, 2 eggs, 1 tablespoon of garlic and herb seasoning, 1/2 cup of ketchup, 1 tablespoon of Worcestershire sauce, salt, and pepper. Mix well using your hands.

Transfer the mixture to a baking sheet lined with parchment paper, shaping it into a loaf.

Bake in the preheated oven for 40 minutes.

While the meatloaf is baking, prepare the glaze by mixing together 1/2 cup of ketchup, 1 tablespoon of chili sauce, 1 tablespoon of yellow mustard, and 1 tablespoon of brown sugar.
