250 grams Kunafa (shredded phyllo pastry)
1/2 cup unsalted butter or ghee (melted)
2 cups mozzarella cheese
1 1/2 tbsp sugar
2 cups milk
1/4 cup semolina
1 tsp rose water
1 cup sugar (for syrup)
1/2 cup water (for syrup)
1 tsp lemon juice (for syrup)
1 tbsp rose water (for syrup)

Preheat the oven to 400°F (200°C).

In a food processor, add the phyllo dough and process into small sized pieces or cut into small pieces with scissors.

Add the kunafa into a bowl and pour melted ghee over it. Combine well.

Press half of the kunafa dough into the bottom of an 8-inch greased pan, flattening it well.

In a small pot, heat milk and add sugar, letting it dissolve.

Add semolina to the milk mixture, stirring continuously and cook for about 2 minutes.

Pour in the rose water and mix well to prepare the milk pudding.

In a separate pan, combine sugar, water, and lemon juice, bringing it to a boil to prepare the simple syrup.

Once boiling, simmer for 2-3 minutes and then add rose water.

Pour the milk pudding over the kunafa dough, spreading it evenly.

Generously add mozzarella cheese over the milk pudding.

Add a few tablespoons of milk pudding on top of the mozzarella cheese.

Top with the remaining kunafa dough.

Bake in the preheated oven for about 40 minutes or until the crust is golden brown.

After baking, immediately pour about 3/4 cup of sugar syrup over the kunafa, starting from the edges to the center.

Let it cool for 10 minutes before flipping it onto a plate.

Decorate with ground pistachios and serve warm with reserved simple syrup.
