4 cups homemade chicken stock
1/2 teaspoon curry powder
1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon black pepper
1 teaspoon salt
1/4 cup corn
1 cup frozen peas
1/4 teaspoon chili flakes
1/4 teaspoon garlic powder
2 tablespoons freshly chopped parsley

Place a medium-sized pot on heat.

Add 2 tablespoons of olive oil to the pot.

Once the oil is heated, add 1 cup of chopped red onions and a pinch of salt. Sauté for 3 minutes until fragrant.

Add 1/4 cup of celery stalks and 1/2 cup of chopped carrots (frozen is fine). Stir and cook for a couple of minutes until soft.

Add 3 minced garlic cloves and 1 teaspoon of grated ginger. Sauté for 2 minutes until fragrant.

Add 1 1/2 cups of diced tomatoes and stir to combine with the vegetables.

Add 1 bay leaf and 2 sprigs of thyme.

Add 2 cups of diced potatoes and mix well.

Pour in 4 cups of homemade chicken stock (or vegetable broth for vegan).

Season with 1/2 teaspoon of curry powder, paprika, oregano, black pepper, and 1 teaspoon of salt. Stir to combine.

Bring the mixture to a rolling boil for about 20 to 25 minutes until the potatoes are soft.

After 25 minutes, test if the potatoes are done. If they are, add 1 cup of frozen peas and 1/4 cup of corn. Stir, cover, and cook for another 10 minutes until the peas are soft.

Taste the soup and adjust salt and pepper to your liking. Optionally add 1/4 teaspoon of chili flakes and 1/4 teaspoon of garlic powder for extra flavor.

Garnish with 2 tablespoons of freshly chopped parsley and cook for an additional minute.

Remove the bay leaf and thyme sprigs, then turn off the heat and serve.
