The addition of garlic mayonnaise elevates the burger, providing a creamy, flavorful contrast. Place minced beef in a big mixing bowl.
Roughly mince peeled king prawns and add to the mixing bowl.
Slice spring onions and add them to the meat.
Roughly chop coriander leaves and add to the mixing bowl.
Dice shiitake mushrooms and add them to the mixing bowl.
Season the mixture with 1 whole egg, garlic oil, black pepper powder, salt, and vital wheat gluten.
Mix everything together until well incorporated.
Pound the meat against the mixing bowl a couple of times.
Refrigerate the mixture for 1 to 2 hours covered with cling film.
In a separate bowl, place egg yolks and add Dijon mustard, whisking them together.
Slowly add olive oil to the egg and mustard mixture to avoid splitting.
Continue adding olive oil until the mixture thickens.
Add apple cider vinegar bit by bit to adjust the consistency.
Add remaining olive oil and squeeze in a few drops of lemon juice.
Season the mayonnaise with garlic oil, salt, black pepper powder, and cayenne pepper, mixing well.
Set the garlic mayonnaise aside until ready to use.
Lightly oil your palms and divide the meat mixture into four equal portions.
Roll each portion into a sphere shape and flatten to about 2.5 cm thick.
Place the burger patties on parchment paper.
Heat a pan with oil until hot, then carefully place the burger patties onto the pan.
Sear the patties for about 3 minutes on each side, checking to avoid burning.
After searing, give all sides a light seal.
If the patties are larger, place them in the oven to finish cooking.
Plate the cooked burgers on baby gem lettuce, garnishing with sliced tomatoes and red onions.
