Rinse the red lentils several times to remove debris and dirt.
Soak the lentils in water for about 10 to 12 hours to eliminate anti-nutrients and speed up cooking.
Peel and chop the vegetables: onion, carrots, red pepper, green pepper, garlic, and potatoes.
In a Vitamix or food processor, chop the garlic (or chop by hand).
Add about 6 tablespoons of olive oil to a pot.
Stir fry the onion and garlic until they become light brown, chopping the vegetables as you stir fry them.
Add the paprika, oregano, bay leaves, and salt to the pot, stir frying to enhance the flavors.
Add the soaked lentils and 2 liters of boiling water to the pot, adjusting the water as needed based on pot size.
Stir well and cover the pot slightly.
After 15 minutes, add parsley and turn off the heat.
