Cut the chine bone off the spare ribs.

Remove excess fat and round out the edges of the ribs.

Remove the membrane from the back of the ribs using a paper towel.

Season the ribs on the bone side with 16 mesh coarse pepper first.

Apply holy cow seasoning on top of the pepper.

Pat the seasoning into the ribs and let sit for 15 minutes to 1 hour.

Preheat the smoker to 250 degrees Fahrenheit using post oak wood.

Place the seasoned ribs in the middle of the smoker, away from the fire.

Cook the ribs for 4 to 5 hours without wrapping them.

Check the ribs for color and bend to determine doneness.

Wrap the ribs in foil with barbecue sauce and hold for 1 to 2 hours before serving.
