Today, they are a beloved holiday treat, often enjoyed during Christmas celebrations. In New Zealand, mince pies reflect British heritage and are commonly served at festive gatherings. Modern variations include vegetarian and vegan options, making them accessible to a wider audience.

Place 1 pie shell into a deep-dish pie pan. Keep it in the fridge until needed.
Peel, core, and chop 1 apple.
In a skillet, reheat the mincemeat pie filling and add chopped apple. Bring it to a boil and set it aside to cool.
Peel, core, and slice another 3-4 apples thinly. Mix in the cinnamon sugar.
Pour the prepared mincemeat pie filling into the prepared pie shell. Arrange the apple slices on top of the mincemeat, overlapping until covering the entire filling.
Unroll another pie shell. Cut it into 3/4" strips, about 10 strips.
Weave the strips on top of the apples like a basket weave pattern. Tuck in the edges and brush with egg wash.
Place the pie pan on a baking tray lined with foil. Bake at 400 deg. F on the bottom rack for 50-60 minutes or until the filling is bubbling.
Let cool completely and chill in the fridge for a few hours before cutting.
