Add cleaned and cut chicken thighs into a pot.
Add chopped onions, chicken seasoning, and salt to taste; stir everything together.
Cover the pot and allow the chicken to cook in its own juices for about 5 minutes.
Stir the chicken to check if water needs to be added; if not, cover and cook for an additional 5 to 10 minutes until tender.
In a blender, add onion, Habanero pepper, tomato, and red bell pepper; blend until smooth and set aside.
Peel and cut the plantains into quarters; use a cutting board for safety.
Add salt to the plantains and a little sprinkle of water to help dissolve the salt; toss everything around and set aside to marinate.
Check on the chicken; if tender and stock has thickened, remove the chicken and set aside.
In the same pot, add vegetable oil and fry the chicken until golden brown, adjusting the frying time based on desired texture.
Remove some oil from the pot and add palm oil, then chopped onions; fry until translucent, about 5 minutes.
Add the blended ingredients to the pot and cook for about 10 minutes until oil settles on top of the sauce.
Add the stock from the chicken and shrimp powder (optional); cover and cook.
Fry the plantains until golden brown and drain on paper towels.
Add the chicken back into the sauce, stir, lower the heat, and simmer for about 5 minutes to absorb flavors.
Add the fried plantains to the sauce and stir to combine.
Allow to simmer for about 3 minutes, then add onions and bell peppers for color, if desired.
