500 grams bottle gourd (ghiya), peeled and diced
300 grams mutton or lamb, cut into pieces
2 medium onions, finely sliced
2 tomatoes, chopped
1/2 cup yogurt
2 tablespoons ginger-garlic paste
2-3 green chilies, slit
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
2 tablespoons cooking oil
Fresh coriander leaves for garnish

Heat oil in a large pot over medium heat.

Add cumin seeds and let them splutter.

Add sliced onions and sauté until golden brown.

Stir in ginger-garlic paste and green chilies, cooking for 1-2 minutes until fragrant.

Add the mutton pieces and cook until they are browned on all sides.

Mix in chopped tomatoes, yogurt, turmeric powder, coriander powder, red chili powder, and salt. Cook for 5-7 minutes until the tomatoes soften.

Add the diced bottle gourd and mix well with the meat and spices.

Pour in enough water to cover the ingredients, bring to a boil, then reduce heat to low.

Cover and simmer for about 45 minutes to 1 hour, or until the meat is tender and the gourd is cooked through.

Check seasoning and adjust salt if necessary.

Garnish with fresh coriander leaves before serving.
