Preheat the oven to 375°F (190°C).
Peel and slice the sweet potatoes and cassava into thin rounds.
In a large skillet, melt butter over medium heat and sauté chopped onion and garlic until translucent, about 3-4 minutes.
Layer half of the sweet potato and cassava slices in a greased baking dish.
Pour half of the heavy cream over the first layer, then sprinkle with cheese, nutmeg, and black pepper.
Add the remaining sweet potato and cassava slices on top.
Pour the remaining heavy cream over the second layer and season with salt and thyme.
Top with bread crumbs and a drizzle of olive oil.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
Let it cool for a few minutes before serving.
