Introduce the recipe and mention using homemade puff pastry, but also suggest store-bought options like pre-rolled puff pastry or puff pastry blocks.
Add 1 teaspoon of dried sage, 1/4 teaspoon of salt, and a few shakes of white pepper to the pork sausage meat in a bowl.
Mix the sausage meat and seasonings thoroughly with a fork, then cover and set aside.
Dust the work surface with flour and roll out the homemade puff pastry to a rectangle using a rolling pin with a 3 mm spacer.
Trim the edges of the rolled pastry to keep them straight, then cut the pastry into eight equal pieces.
Dust the pastry pieces with flour and let them rest in the fridge for at least 10 minutes.
Divide the sausage meat into eight equal portions, approximately 50 grams each, and roll each portion into a log about 13 cm long.
Prepare an egg wash by cracking a large egg into a container, adding a dash of milk, and whisking until it runs off the whisk as a loose liquid.
Preheat the oven to 170°C (340°F) or gas mark 3.
Take one pastry sheet from the fridge, coat it with a thin layer of egg wash, and place a sausage meat log at one edge.
Roll the pastry over the sausage meat, brushing more egg wash on the seam to seal it, then place the roll seam-side down on a lined baking tray.
Repeat the process for all eight sausage rolls, giving them a good coat of egg wash on top before baking.
Bake in the preheated oven for 25 minutes, checking for color and baking longer if necessary until golden brown.
Remove the sausage rolls from the oven and let them cool on a wire rack for about 10 minutes before serving.
