Today, variations of Al Faham can be found across the Middle East, often adapted to local tastes and ingredients.

Start by marinating the whole chicken with 4 cloves of minced garlic, 1 chopped onion, 1 tablespoon of cumin, 1 tablespoon of coriander, 1 tablespoon of paprika, 1 teaspoon of turmeric, 3 tablespoons of olive oil, the juice of 1 lemon, salt, and black pepper.
Mix all the ingredients well to ensure the chicken is fully coated in the marinade.
Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for better flavor.
After marinating, preheat the grill to medium-high heat.
Take the chicken out of the marinade and let the excess drip off.
Place the chicken on the grill, breast side down, and cook for 15-20 minutes.
Flip the chicken over and continue grilling for another 15-20 minutes until the internal temperature reaches 165°F.
Once cooked, remove the chicken from the grill and let it rest for 10 minutes before carving.
Carve the chicken into pieces and serve it with pita bread, pickles, and fresh herbs.
