Stuffed Steak with Chimichurri Sauce

Boil water and pour in 1 cup of rice.

Cut smoked bacon into small pieces and add to a very hot pan.

Chop garlic, red onions, chili, and spring onions, then add to the pan with bacon.

Season with a pinch of salt, ground black pepper, balsamic vinegar, and brown sugar.

Strain the cooked rice and mix it with the stuffing ingredients.

Add chopped cilantro to the stuffing mixture.

Remove steak from the fridge an hour before cooking to avoid it being too cold.

Trim excess fat from the steak and make a cut in the middle to open it up.

Season the inside and outside of the steak with salt and pepper.
