Preheat the oven to 350°F.
Cook the ground beef in a pan until browned and cooked through.
Drain a little fat from the cooked beef, leaving some for flavor.
Add about a teaspoon of dried minced onion to the beef while cooking.
Season the beef with a pinch of salt, black pepper, and 3/4 teaspoon minced garlic.
Add 1.5 teaspoons of Worcestershire sauce to the beef and mix well.
Steam the 12 ounces of frozen riced cauliflower in the microwave for about 7 minutes, or according to package instructions.
Once the cauliflower is steamed, let it cool slightly before mixing it with the beef.
In a bowl, whisk together 2 eggs and add a pinch of salt and black pepper to taste.
Combine the steamed cauliflower rice with the beef mixture, stirring thoroughly.
Add the whisked eggs to the beef and cauliflower mixture and mix until well incorporated.
Stir in 1 cup of shredded Mexican style cheese until evenly mixed.
Transfer the mixture to a greased 9x13 baking dish, spreading it evenly.
Top the casserole with a thin layer of shredded cheese.
Bake in the preheated oven for about 30 minutes, checking for bubbling and melted cheese.
Let the casserole cool for about 5 minutes before serving.
