3 - 4 tablespoons of tomato sauce
filtered water
2 cinnamon sticks
1 bay leaf
2 star anise
1 teaspoon of cumin seed
1 teaspoon of fennel seed
3 cloves
½ teaspoon of black peppercorn
½ teaspoon of white peppercorn
a small bowl of Shaoxing cooking wine
4 - 5 tablespoons of light soya sauce
2 tablespoons of dark soya sauce
1 teaspoon of salt
2 tablespoons of white sugar or rock sugar
