Start by preparing the chimichurri sauce. Run garlic cloves through a GoodCook garlic press.
Finely mince fresh parsley using a GoodCook rolling herb mincer and add it to a bowl.
Finely mince fresh rosemary and thyme, adding them to the same bowl with parsley.
Add red wine vinegar and olive oil to the bowl, then season with salt and pepper.
Combine everything in the bowl until well incorporated and set aside.
Take the pork loin and slice it in half to fit in the roasting pan.
Drizzle olive oil over the pork loin and season all sides with salt and black pepper.
Transfer the seasoned pork loins into a GoodCook quick baste roaster.
Spread a little chimichurri sauce over the top of the pork loins.
Pour beef stock into the pan to help with drippings.
Preheat the oven to 400°F (204°C) and place the pork in the oven for 30 to 35 minutes.
After 30 to 35 minutes, open the oven and baste the pork with the pan drippings using a GoodCook silicone baster.
Return the pork to the oven and prepare the vegetables by drizzling olive oil over carrots and Brussels sprouts.
Season the vegetables with salt and pepper, and mix to coat them evenly.
Add the seasoned vegetables to one side of the roasting pan with the pork.
Push the pan back into the oven and cook for an additional 30 to 40 minutes until the vegetables are tender and the pork is cooked through.
Check the pork for a beautiful brown color and ensure the vegetables are perfectly cooked.
Serve the pork on a platter alongside the vegetables, or slice the pork and serve with the vegetables.
Finish by adding more chimichurri sauce on top of the pork before serving.
