Welcome to the channel and introduce the recipe for pastelitos de maíz.
Prepare 2 pounds of ground beef and add 1/2 onion, 2 tomatoes, 1 sprig of cilantro, 1/2 bell pepper, and 3 cloves of garlic, all diced into small pieces.
Melt approximately 2 tablespoons of margarine in a skillet over medium heat.
Add the diced onion and other vegetables to the skillet and sauté for about 3 minutes until softened.
Add the ground beef to the skillet, which has been washed with vinegar and rinsed.
Add 1 tablespoon of chicken bouillon, 1 tablespoon of paprika, and 1 tablespoon of black pepper, along with salt to taste. Cook for about 10 minutes.
Add the diced potatoes (3 large potatoes) to the beef mixture, stirring well to combine.
Add 1/2 cup of water to help cook the potatoes. Cover and cook for about 10 minutes or until the potatoes are tender and the water has evaporated, stirring occasionally.
Add 2 tablespoons of sweet sauce to balance the acidity of the tomatoes.
Prepare the salad by adding diced beets, cilantro, diced tomatoes, and finely chopped cabbage.
Add 1/2 cup of white vinegar and 1/2 cup of hot water to the salad to extract color from the beets.
Chop the cabbage finely and mix it with the salad ingredients.
Add 1 teaspoon of dried oregano, black pepper, cumin, and salt to taste, along with the juice of 1/2 lime.
Prepare the masa by mixing 4 cups of corn masa (Maseca) with 1 tablespoon of chicken bouillon, 1 tablespoon of achiote, and 1 teaspoon of baking powder.
Add warm water gradually and knead until the dough is soft and holds together without cracking.
Take a ball of masa, place it between two plastic sheets, and flatten it with a board to form a tortilla.
Add a spoonful of the beef filling to the center of the tortilla, being careful not to overfill.
Fold the tortilla over the filling and seal the edges firmly to prevent leakage.
Heat enough oil in a deep pan to cover the pastelitos halfway and ensure it's hot.
Fry the pastelitos over medium heat, turning them after about 3 minutes until golden brown on both sides.
Remove the fried pastelitos and place them on a paper towel to absorb excess oil.
