Rinse red lentils and mung beans under cold water until water runs clear.
Heat wok oil in a large pot over medium heat until shimmering.
Add chopped onion, shallots, and garlic; sauté until softened, about 3-4 minutes.
Stir in diced carrot and Surinamese adjuma pepper; cook for another 3-4 minutes.
Add rinsed lentils, mung beans, water, and spices; bring to a boil.
Reduce heat and simmer until lentils and beans are tender, about 20 minutes.
Stir in tomato chutney and amsoy; cook for an additional 5 minutes.
Blend the soup until smooth using an immersion blender or regular blender.
Season with mineral salt to taste.
Garnish with fresh cilantro before serving.
