Sweet and Spicy Mango

3 Mangoes (half-riped)
1 Branch of Curry Leaf
2 Dry Chillies
1/4 TSP Fenugreek Seeds
1/2 TSP Mustard Seeds
1/2 TSP Cumin Powder
1 TSP Turmeric Powder
1 TSP Chilli Powder
1 Garlic Clove (Chopped)
1/2 inch Ginger (Chopped)
4 TBSP Brown Sugar
1/4 TSP Salt
1 1/2 Cup of water
1 TBSP Oil

1. In a pot, heat the oil and add mustard seeds, fenugreek seeds, and dry chillies. Cook until the mustard seeds start to pop.

2. Add chopped garlic and ginger to the pot and sauté until fragrant.

3. Add the curry leaves and stir for a minute.

4. Add the mangoes, turmeric powder, chilli powder, cumin powder, brown sugar, salt, and water to the pot.

5. Bring the mixture to a boil, then reduce the heat and simmer until the mangoes are tender and the sauce thickens.
