In the same pot, sauté chopped onion and garlic in butter until fragrant, about 3-4 minutes.
Add the cut tripe back into the pot with the sautéed onion and garlic.
Stir in red pepper flakes, paprika, and bay leaves.
Pour in enough water to cover the tripe and bring to a boil.
Reduce heat and simmer for another 30 minutes to blend flavors.
Season with salt and black pepper to taste.
Serve hot, garnished with chopped parsley and mint.
Offer lemon wedges and vinegar on the side for drizzling.
