Preheat the Char-Griller Grand Champ offset smoker to medium-high heat.
In a bowl, combine ground beef, minced garlic, smoked paprika, salt, and black pepper.
Form the mixture into 4 burger patties, making a slight indentation in the center.
Cook the patties on the smoker for 4-5 minutes on one side until browned.
Flip the patties and top each with a slice of cheddar cheese, cooking for another 3-4 minutes until the cheese melts.
Meanwhile, cook the bacon in a skillet until crispy, then drain on paper towels.
Toast the burger buns on the grill for 1-2 minutes until golden.
Assemble the burgers by spreading barbecue sauce on the bottom bun.
Layer with lettuce, a burger patty, bacon, pickles, and tomato slices.
Spread mustard on the top bun and place it on the assembled burger.
Serve immediately with extra barbecue sauce on the side.
