Paleo Steak Burgers are a modern take on the classic American burger, emphasizing whole, unprocessed ingredients. The Paleo diet, inspired by the presumed eating habits of our Paleolithic ancestors, focuses on meats, vegetables, nuts, and seeds while avoiding grains and dairy. These burgers highlight the simplicity and flavor of fresh ingredients, making them a popular choice for health-conscious eaters today. Variations abound, with many opting for different proteins or toppings to suit personal tastes.

Cut 2 large peeled shallots in half and then into planks, finally mincing them.
Heat a teeny bit of grapeseed oil in a nonstick skillet over medium-high heat.
Add the minced shallots to the skillet and cook for about 3-4 minutes until they soften and become slightly caramelized.
Turn off the heat and mix in the minced flat-leaf Italian parsley, then set aside to cool.
Trim large pieces of fat from the chuck beef and cut the short ribs away from the bone, removing any silver skin from the short ribs.
Grind the trimmed chuck beef and short ribs together using a meat grinder set to coarse.
In a bowl, season the ground meat with smoked paprika, salt, and black pepper.
Add the cooled shallot and parsley mixture to the ground meat and mix until evenly incorporated without packing tightly.
Form the mixture into balls about the size of a tangerine, then flatten them into patties.
Layer the patties between parchment paper and cover with plastic wrap for storage.
Preheat a Swiss diamond grill pan over medium-high heat and cook the patties until they develop grill marks and are cooked to medium-rare, flipping as needed.
Optionally, transfer the grill pan to a 375°F oven to finish cooking the burgers, if desired.
