Clean beef trotters and bones thoroughly under cold water.
Place trotters and bones in a large pot and cover with water.
Bring to a boil over high heat, skimming off any foam that rises.
Reduce heat to low and simmer for several hours until the meat is tender.
Add salt and black pepper to taste during the last hour of cooking.
Mince garlic and add it to the pot along with vinegar.
Continue to simmer for an additional 30 minutes to infuse flavors.
Remove from heat and let cool slightly before serving.
Serve hot with chopped fresh herbs and chili peppers on the side.
Accompany with lavash bread for dipping.
