1 cup of sake
1/3 cup of water
3 inches of fresh ginger
3 cloves of garlic
3 tablespoons of hoisin sauce
2 tablespoons of rice vinegar
3 bay leaves
3 star anise
1 tablespoon of black peppercorns
1 stick of cinnamon
2 chili de arbol
3 cardamom pods
2 tablespoons of light brown sugar
1 tablespoon of granulated sugar
2 lemongrass stalks

Transfer all the pork belly into a large pot and cover it with cold water.

Bring the pot to a boil and let it simmer for 15 minutes.
