Steak Strips with Mushroom Sauce and Smashed Potatoes

Chicken is leaner and often less expensive than steak.
Boil baby potatoes until soft.
In a skillet, heat 2 tablespoons of oil and sauté chopped onion until translucent.
Add minced garlic and canned mushrooms; sauté until soft, about 5 minutes.
Stir in 2 tablespoons of all-purpose flour and cook to remove raw smell.
Add chicken stock to the mixture and cook until thickened.
Remove from heat and set aside.
Flatten the boiled potatoes using a glass or fork, being careful not to break them.
Place flattened potatoes on a baking sheet lined with parchment paper.
Drizzle with oil, sprinkle with salt, black pepper, and optional oregano.
Bake at 454°F for 10-15 minutes until crispy.
Season steak strips with salt and black pepper.
Heat a cast iron skillet until smoking, add steak strips, cooking for 3 minutes on each side.
Remove steak from skillet and cover to keep warm.
Adjust the consistency of the mushroom sauce if needed, adding 1-2 tablespoons of soy sauce.
Slice the cooked steak into strips and serve with the mushroom sauce and crispy potatoes.
