chicken broth

🥗Healthier: low-sodium chicken broth

💰Cheaper: water + bouillon cubes

Using low-sodium broth reduces sodium intake while water + bouillon is a cost-effective option.

parmesan cheese

🥗Healthier: nutritional yeast

💰Cheaper: grated mozzarella

Nutritional yeast adds a cheesy flavor while being lower in calories, and mozzarella is often less expensive.

cheddar cheese

🥗Healthier: reduced-fat cheddar

💰Cheaper: colby jack

Reduced-fat options lower calories, while colby jack can be more affordable.

1

Heat 2 Tbsp of olive oil over medium-high heat in a pan.

2

Add bite-sized pieces of boneless chicken breast to the pan, cooking in batches to avoid overcrowding.

3

Once cooked through, remove the chicken and set aside in a bowl.

4

In the same pan, heat 2 Tbsp of butter and 2 Tbsp of olive oil over medium heat.

5

Add sliced onions to the pan and caramelize for about 15 minutes, stirring occasionally.

6

Season the onions with a little salt and black pepper while cooking.

7

After 15 minutes, add chopped garlic, seasoned salt, black pepper, thyme, and tarragon, cooking for another minute until fragrant.

8

Pour in white wine and W sauce, reducing heat to a simmer, scraping bits from the bottom of the pan until the liquid is almost absorbed.

9

Set the onion mixture aside once the liquid is reduced.

10

Add remaining butter and olive oil to the pan, heating it up again.

11

Add mushrooms to the pan and sauté until golden brown, then remove from heat.

12

Return the onion mixture to the pan, add the sautéed mushrooms, uncooked rice, and spinach, cooking until the spinach wilts down.

13

Pour in beef broth and heavy whipping cream, bringing the mixture to a slight simmer.

14

Once simmering, add the cooked chicken back into the pan and mix well.

15

Turn off the heat and transfer the mixture to a greased baking dish.

16

Top the mixture with mozzarella cheese (or Swiss cheese if preferred).

17

Cover the baking dish tightly with aluminum foil.

18

Bake in a preheated oven at 375°F for 30 minutes.

19

After 30 minutes, remove the foil and return the dish to the oven for an additional 10 to 15 minutes until bubbling and golden on top.
