colseslaw

🥗Healthier: cabbage salad

💰Cheaper: shredded cabbage

Cabbage salad is fresher and can be made at home.

pork shoulder

🥗Healthier: pork tenderloin

💰Cheaper: chicken thighs

Tenderloin is leaner; chicken thighs are often less expensive.

1

Start with an 11 lbs pork shoulder, which is bone-in picnic pork, and note the price of 89 cents a pound.

2

Add 2 tablespoons of salt to the pork, sprinkling it around.

3

Slice 3 large onions and add them to the pork in the pan.

4

Open a can of whole roasted peppers and drain them, then add them to the pork.

5

Place the pork fat side up in a roaster and cover it with a lid.

6

Cook the pork at 250°F for 18 hours, either in a roaster or in the oven, covered tightly with foil to prevent drying out.

7

After 18 hours, check the pork to see how tender it is and shred it off the bone.

8

For the slaw, mix 1/2 cup of mayonnaise, 1/2 cup of barbecue sauce, and the juice of 2 limes in a bowl.

9

Chop about 1/4 cup of red onion and half a cup of cilantro, then add them to a bowl with shredded cabbage.

10

Toss the cabbage mixture with the dressing until well combined.

11

Assemble the sliders by cutting the slider buns in half and adding shredded pork, followed by the slaw on top.

12

Garnish the sliders with extra cilantro and serve.
