Measure out 3 cups of whole wheat flour and sift it (about 3.5 cups total).

Add 0.5 teaspoons of baking powder and 1 teaspoon of salt to the flour and mix.

Slowly add 4 cups of water to the dry ingredients while stirring.

Let the batter sit for about 30 minutes.

Heat 0.5 cups of oil in a large pot over medium heat.

Add cubed flat iron steak and cook until about three quarters done, then remove and set aside.

Add another 0.5 cups of oil to the pot and add chopped onions, cooking until translucent (about 2 minutes).

Add 3 teaspoons of garlic and cook until fragrant (about 30-45 seconds).

Add chopped green bell pepper and chopped serrano pepper, stirring for about 2-3 minutes.

Add chopped tomatoes, 1 tablespoon of cinnamon, salt, and pepper, and stir.

Bring the mixture to a boil, then reduce heat and simmer for about 5 minutes.

Add the steak back into the pot along with 6 ounces of tomato paste and stir until mixed.

Cover and simmer for another 10 minutes.

Prepare flatbread by adding oil to a saucepan and pouring in a ladle of batter to cook like a pancake.

Flip the flatbread once the bottom is cooked and char it slightly on both sides.
