PAPPA AL POMODORO & BURRATA CHEESE

Chop the red onions.

Add 5 tablespoons of olive oil into a deep pan.

Add garlic and some basil to the pan and turn the fire on to medium.

When the oil is warm, add the chopped onions and a little bit of salt.

Cook the onions until they are nice and soft, then remove the garlic and basil.

Add the peeled tomatoes to the pan and let it cook with the lid on for about 4-5 minutes.

Cut the stale bread into small pieces.

Add the bread to the tomato sauce with a little bit of vegetable stock if necessary.

Let the bread and tomato cook slowly with the lid on for about 10-15 minutes, adding more stock if the mixture is too dry.

After 10 minutes, the bread should be really soft, like soft mashed potatoes.

Remove from heat and mix everything together with a kitchen whisk, adding some olive oil.

When everything is nice and creamy, add some fresh basil.

Plate the pappa al pomodoro at the center of the dish.

Add some fresh basil and a scoop of burrata on top.

Finish with some fresh black pepper and a drizzle of olive oil.
