Bring 1 liter of fresh milk with 1 tbsp vinegar to a boil and strain the liquid after the cheese has clotted to prepare the cream cheese.

Add sugar, water, and lemon juice to a saucepan over medium-high heat. Bring to a boil, then reduce heat and simmer for 8-10 minutes until slightly thickened. Stir in rose water and let cool.

In a medium-hot saucepan, cook milk and sugar together, stirring until sugar dissolves. Bring fine semolina to a boil, stirring continuously until thickened, about 1-2 minutes.

Reduce heat, add cheese and rose water, mixing until melted and forming a soft dough. Allow to cool until warm enough to handle.

Slice the dough into two equal parts, roll to a thickness of 3-4 mm, add cheese stuffing, roll it up, and cut edges with a sharp knife to form logs.

Repeat with all dough, trimming to desired size and garnishing with crushed pistachios and melted chocolate.
