Place 1 cup of quinoa in a saucepan with 2 cups of water.
Gently simmer for about 20 minutes until all the water has absorbed and the quinoa is cooked through.
Let the quinoa cool.
Place the cooled quinoa into a large bowl.
Add 3 chopped and de-seeded tomatoes to the bowl.
Add 1/2 chopped and de-seeded cucumber to the bowl.
Add 1 cup of chopped parsley to the bowl.
Add 1/3 cup of chopped mint to the bowl.
Stir the ingredients in the bowl together.
In a jar, combine 1/3 cup of lemon juice and 2 tablespoons of olive oil.
Place the lid on the jar and shake to mix.
Pour the dressing over the salad and stir to combine.
Season with salt and black pepper to taste.
Taste the salad to ensure the seasoning is correct.
Transfer the salad to a serving bowl.
Serve immediately or refrigerate until ready to serve.
