1 teaspoon aromat shrimp seasoning
1 large onions
3 cloves garlic
1 tablespoon ginger
2 dried chilies
2 bay leaves
1 teaspoon coriander
1 teaspoon rosemary
1/2 teaspoon anise seed
4 cups water
1 teaspoon salt
1/2 cup palm oil
1 lb mackerel
1 cup tomato sauce
2 medium fresh tomatoes
2 tablespoons tomato paste
1 teaspoon powdered pepper
4 eggs
2 cups kontomire (cocoyam leaves)

Clean the cow skin (willy) thoroughly.

Season the cow skin with aromat spice blend seasoning powder and aromat shrimp seasoning.

Add enough water to steam the cow skin and a little salt, then cover and steam until tender.

Set aside the cow skin and the broth once tender.

In a clean pot, pour in palm oil and heat it up.

Add mammon (or onions) to the hot oil for flavor.

Blend together onions, garlic, ginger, dried chilies, bay leaves, coriander, rosemary, and anise seed, then add to the pot.

Stir the blended ingredients and cover to cook for about 10 minutes to build flavors.

After 10 minutes, cover again and cook for an additional 10 to 15 minutes.

Add chopped fresh tomatoes to the pot and cook for about 5 minutes to build flavors.

Stir in tomato paste and allow it to cook down slowly until it thickens and the oil rises to the top.

Add powdered pepper and aromat shrimp seasoning along with aromat stew seasoning powder to the stew.

In a separate bowl, mix the ground melon seeds (agushi) with a bit of water and crack in 7 or 8 eggs, mixing well.

Scoop the agushi mixture into the stew and add the steamed cow skin along with the stock.

Season with a little salt, being mindful of the salt already present in the agushi and stock.

Stir everything well and set aside to cook.

Wash the kontomire leaves thoroughly, removing any hair and chop into small pieces.

Add the fresh kontomire leaves directly into the stew without pre-boiling.

Cover the pot and steam on low heat for about 30 minutes.

Check the stew; the kontomire should be soft and the stew rich and colorful.
