Measure out 2 cups of flour into a medium sized bowl.

Add 1 teaspoon of baking soda and a pinch of salt to the flour and mix together.

In a smaller bowl, add about 3 medium sized bananas and mash them with a fork or potato masher.

Crack in 2 medium sized eggs into the bowl with the mashed bananas.

Add 1/2 cup of brown sugar to the banana and egg mixture.

Add 1 teaspoon of vanilla extract to the wet ingredients.

Pour in 1/3 cup of oil and mix the wet ingredients together until well combined.

Pour the wet ingredients into the bowl with the dry ingredients and fold together until smooth, being careful not to over mix.

Pour the batter into a greased and lined 9x5 loaf pan.

Bake in a preheated oven at 350°F (180°C) for about 50 minutes or until it springs back when pressed.

Let cool in the loaf pan for about 10 minutes before transferring to a wire rack.
