Today, this dish is enjoyed globally, often adapted with various beers and served with different sides, but the essence of hearty comfort remains unchanged.

Preheat the oven to 325°F (163°C) with a large Dutch oven inside.
Pat the beef chuck dry with paper towel.
Mix together 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon paprika to create a rub.
Rub the spice mix all over the beef chuck, ensuring to cover all sides and edges.
In a pan, add 4 minced garlic cloves and 1 tablespoon olive oil over medium to medium-high heat; stir for 2-3 minutes until fragrant and translucent, then turn off the heat.
Remove as much cooked garlic as possible and place it into a large measuring cup, leaving the oil in the pan.
To the measuring cup with garlic, add 6 oz tomato paste, 1 cup beef broth, 2 tablespoons Worcestershire sauce, and a full 12 oz bottle of Guinness beer; stir to combine.
Sear the seasoned chuck roast in the garlic oil left in the pan over medium-high heat, ensuring to brown all sides for about 5-10 minutes.
In the preheated Dutch oven, add 3 large diced onions, then place the seared chuck roast on top.
Add a couple tablespoons of barbecue sauce on top of the chuck roast.
Pour the Guinness mixture over the beef and add 4 chopped carrots around the beef.
Top the beef with fresh thyme for added flavor.
Cover the Dutch oven and cook in the oven for about 3-4 hours.
Check the roast at the 3-hour mark; if it cannot be shredded, return it to the oven for an additional 30-60 minutes.
Once tender, shred the beef in the pot to absorb the flavorful juices and let it rest for 30 minutes or longer before serving.
Garnish with freshly diced parsley before serving.
