Prepare the mushrooms by cutting the bottom off and breaking them into little pieces using your hands.

Add 2 tbsp of mirin, 2 tbsp of soy sauce, 1 tbsp of sugar, and 2 tsp of hondashi soup stock to the pot.

Stir the mixture gently to combine the seasonings, then place the mushrooms on top without mixing them in.

Cover the pot with a lid and bring it to a boil over medium-high heat.

Once boiling, reduce the heat to low and let it cook for 14 minutes.

After 14 minutes, turn off the heat and let it steam for at least 10 minutes without peeking.
