1

Start with 4 pounds of lamb from a whole lamb, cut into chunks.

2

Place the lamb in a pressure cooker.

3

Add 1 onion, 2 tablespoons of garlic, 1 cinnamon stick, 2 teaspoons of black peppercorns, and 2 teaspoons of salt to the pressure cooker.

4

Pour in 1 liter of water.

5

Seal the pressure cooker and cook for 20 to 25 minutes once it reaches pressure.

6

After cooking, separate the meat from the stock, keeping the stock for later use.

7

In a large pot, heat some olive oil over medium heat.

8

Add 1 cup of sliced onions and 1 tablespoon of chopped garlic; sauté for about 4 minutes.

9

Add 1 cup of carrots and a couple of pinches of black pepper; stir and cook for another 4 minutes.

10

Add the lamb back into the pot along with the reserved stock and 1 can of whole plum tomatoes; break down the tomatoes with a spoon.

11

Cover and cook on medium heat for about 10 minutes.

12

After 10 minutes, add 2 cups of mushrooms and 1 cup of chunky bell peppers; stir and cover again.

13

Cook for another 6 to 7 minutes.

14

Uncover and add 2 glasses of red wine and a few dashes of Worcestershire sauce; reduce heat to low and simmer for 15 to 20 minutes.

15

Check the stew for seasoning, adjusting salt and pepper as needed.
