Surinamese Roti filled with Potatoes

Today, Roti has gained popularity beyond its borders, with many variations appearing in Caribbean and South Asian communities worldwide.

Olive oil is healthier, while margarine is often less expensive.
Mix 400 grams of self-rising flour with 1/2 teaspoon baking powder in a bowl.
Add 1/2 teaspoon of olive oil and knead for 5 minutes, adding water until the dough pulls away from the bowl.
Shape the dough into a smooth ball and let it rise for 30 minutes, covered with plastic wrap.
Divide the dough into small balls and let them rise for another 5 minutes.
Roll out each ball into flat discs.
Boil some potatoes with a bit of salt, then mash them.
Blend 1 clove of garlic and 1/2 red chili (seedless) together.
Mix the garlic and chili with the mashed potatoes and add 1 teaspoon of ground cumin.
Take one rolled disc and fill it with 2 tablespoons of the potato mixture, then shape it back into a ball.
Roll out the filled ball again and place it in a pan.
Brush the roti with 1 tablespoon of olive oil and cook, flipping every 2 minutes, until the edges are lightly browned and the roti puffs up.
