Peel and grate the mandi'o.

Add grated mandi'o and carrot; cook for another 5 minutes until tender.

In a bowl, mix vegetable meat with cooked vegetables, egg, milk, cheese, salt, black pepper, and cumin until well combined.

Grease a baking dish with olive oil.

Pour the mixture into the baking dish, spreading evenly.

Sprinkle parsley on top for garnish.
