Homemade Lemon Cookies

50 ml (1/4 cup) lemon juice
Zest of one lemon
250 grams (1 3/4 cups) self-rising flour
1 medium egg
150 grams (2/3 cup) granulated sugar
1 teaspoon vanilla extract
125 grams (1/2 cup) melted unsalted butter
Powdered sugar for garnish

In an electric mixer, beat on medium speed the sugar and the melted butter until obtain a homogeneous mixture.

Pour the lemon juice, lemon zest and beat for 1 to 2 minutes.

Add the egg and the vanilla extract and beat until a quite creamy mixture.

Add the flour and fold with a spatula until obtain a consistent dough.

Cover the bowl with cling film and refrigerate for about 1 hour.

Preheat the oven to 200ºC (400ºF). Line a baking tray with parchment paper.

Remove the bowl from the fridge and shape with your hands 20 to 22 balls.

Place the balls in the baking tray, making sure to leave a little room between each one.

Bake for 10 to 12 minutes (the time depends on the oven).

Remove from the oven and let cool.

Garnish with powdered sugar and serve.
