Preheat the oven to 450°F and move the oven rack to the lowest slot.

In a blender, add 4 room temperature eggs.

Add 1 1/2 cups of whole milk to the blender.

Add 3/4 teaspoon of kosher salt (or 1/2 teaspoon of fine salt).

Blend the mixture for about 30 seconds to a minute until just incorporated.

Add 1 1/2 cups of all-purpose flour to the blender and blend for another 30 seconds to a minute until fully incorporated.

Pour in 3 tablespoons of melted butter and blend for another 10 seconds until mixed.

Spray a muffin pan (or popover pan) with non-stick spray, covering the base, sides, and top edges.

Pour the batter into the muffin cups, filling them about 3/4 of the way up.

Place the muffin pan in the preheated oven on the bottom rack and bake for 20 minutes without opening the oven.

After 20 minutes, reduce the heat to 350°F and bake for another 20 minutes until golden brown and puffed up.

While the popovers are baking, prepare maple butter by mixing 1/2 stick of butter, 1 tablespoon of maple syrup, 1/4 teaspoon of cinnamon, and a sprinkle of salt in a bowl.

After 40 minutes, remove the popovers from the oven and poke holes in each one to release steam.

Serve the popovers with the maple butter.
