Prepare a beef and lamb combination for the stew, using 2 lb chuck roast and 1 lb lamb cubes.

Gather seasonings including salt, black pepper, and curing salt.
Use fresh garlic and onions, diced, instead of powder.
Use diced frozen hash brown potatoes instead of fresh potatoes.
Grind the chilled meat using a stand mixer with a grinder attachment and coarse dye.
Mix in seasonings, Guinness, onions, garlic, and potatoes into the ground meat mixture.
Sauté onions, garlic, and potatoes in a skillet until halfway cooked before cooling them down.
Stuff the sausage mixture into soaked hog casings, ensuring no air bubbles are present.
Twist sausages into links and refrigerate overnight to dry.
Smoke sausages the next day until they reach an internal temperature of 150°F.
Prepare cabbage by cooking it with bacon and adding Guinness for flavor.
